Espresso Dark Chocolate Crinkle Cookies

Happy Valentine's Day! What do you get a husband that really doesn't care too much about Valentine's day or gifts for that matter....cookies....they love cookies !

So here's a cookie designed for my husband that any of your loved ones who love espresso and dunkin their cookies in it - will love! This is definitely a dunk your cookie in coffee or milk - cookie!

What you'll need:

  • 1 cup of canola oil

  • 3/4 cups of brown sugar

  • 3/4 cups of white sugar

  • 2 tsp of vanilla

  • 1 tsp of baking soda

  • 2 large eggs

  • 3 - 3 1/2 cups of flour

  • 1/2 cup of espresso - want a more coffee taste - make it 3/4 cup of espresso

  • 3/4 cup of dark chocolate chips (less or more as desired)

For rolling:

  • 1/2 cup of confectioners sugar in a small bowl.

  • 1/2 of granulated white sugar in a small bowl.

What you'll do:

Preheat oven to 350 degrees.

In a stand mixer, combine the oil and sugars until smooth. Add the vanilla, coffee and baking soda - until well mixed. Add the eggs - mix well.

Slowly add the flour by 1/2 cup. Until 3 cups. The batter should be thicker but not flourly - so that you can roll the dough into a ball, if its too loose, add 1 tbsp of flour at a time. If you added 1/2 espresso - 3 cups of flour should do. If you added 3/4 espresso - you may have to use 3 1/2 cups of flour.

Take a spoon or cookie scoop and drop into the granulated sugar. Coat the cookie ball well - and then drop it into the confectioners sugar and coat well.

Place cookie balls, on a cookie sheet lined with parchment paper.

Bake cookies for 11-13 minutes, until the tops have crinkled. You want these cookies to be soft.

Enjoy with your loved one(s) tonight with some coffee or a good tall glass of milk! Happy Valentines Day!!

Don't buy prepackaged. Be your own butcher! Buy larger pieces of meat for cheaper and prepare them at home. This will allow you to incorporate more expensive pieces of meat on a weekly budget, experiment with more recipes and save you lots of money!
