White Chocolate Chip Nutella Biscotti

I love white chocolate

I love love love Nutella....

I made these cookies for me!

What you'll need:

  • 1 cup of sugar

  • 3 eggs

  • 2 tsp of vanilla

  • 4 tsp of baking powder

  • 3/4 cup softened salted butter

  • 1/2 cup of white chocolate chips

  • 3 1/2 cups of flour  (1/2 cup will be set aside

  • 1 - 1 1/2 cups of Nutella (or your favourite chocolate spread)

  • 1 tsp of salt

  • 1/4 cup of icing sugar

  • Parchment paper

What you'll do:

Preheat oven to 350 degrees.

In a medium sized bowl, combine dry ingredients; 3 cups of the flour, baking powder, salt.

In a stand mixer or other, cream the sugar and butter, until pale yellow. Add the eggs one at a time, until well mixed. Add the vanilla, mix well.

You will now mix using your hands, it has a better result that continuing with the stand mixer.

Add slowly to the wet ingredients the dry mixture and white choco chips. Combine well using your hands. Once mixed, flour a flat surface and start kneading the dough (as you would bread) and keep adding flour, until the dough is stiffed, but still soft. 

What does that mean? if you poke the dough, will it slowy come back.

Cut the dough evenly in 8 pieces. Roll the dough into logs, and then flatten the logs into thick strips, using a rolling pin, about 1/2 inch thick. With a spoon, into the middle of four of the dough strips, make an indent - this is where we'll add a layer of Nutella.

Take a spoonful of Nutella, and fill the indent you created with your spoon. Repeat until all four strips are filled with Nutella.

Cover the Nutella strips with the other four dough strips. With your finger tips combine the edges of the two dough strips, and carefully roll the dough together to form a larger dough log- this time stuffed with Nutella! 

Place logs onto baking sheet lined with parchment paper.

Bake 25-30 mins, until golden. Remove the logs, cool for 2 mins.

With a very sharp knife, cut perpendicular the log, to create pieces of biscotti. Place the biscotti back onto the baking sheet, and bake the biscotti for another 5-10 mins.

Cool onto a cooling rack, and drizzle the biscotti tops withs icing sugar.

Enjoy! - ....I'm warning you will not be eating less than 2, or 3 or 4  biscotti!

Don't buy prepackaged. Be your own butcher! Buy larger pieces of meat for cheaper and prepare them at home. This will allow you to incorporate more expensive pieces of meat on a weekly budget, experiment with more recipes and save you lots of money!
