Super Chewy Double Chocolate Chip Cookies

These cookies were created for my husband.

Chewy, chocolatey and extra big choco chips...thats all he asks for in a cookie :)

Best part...super easy and quick to make....

Full belly of double choco chip cookies make the hubby happy :) - or anyone for that matter!

What you'll need:

  • 2 cups of white flour

  • 1 tsp of baking soda

  • 3/4 cup of sugar

  • 1 tsp of vanilla

  • 1 tsp of salt

  • 3/4 brown sugar

  • 1 cup butter softened

  • 2 eggs

  • 3/4 cups of cocoa (try to get a good quality like Fry's, makes a difference)

  • 1/2 cup of large choco chips ( I prefer semi-sweet for these cookies, but any will do just great! - Also feel free to add more or less as you please)

  • Parchment paper

What you'll do:

Preheat oven to 350 degrees.

In a medium sized bowl, mix together the dry ingredients - the flour, baking soda, salt, and cocoa - set aside.

In a standmixer or another bowl, cream the butter and sugar, until its a pale yellow.

Add an egg at a time until well mixed, and add the vanilla.

Slowly mix in the dry ingredients until really well combined. Add your favourite choco chips.

Line a baking sheet with parchment paper. Scoop tsp amount of cookie dough onto the baking sheet. Keep the cookies about 2 cm/1 inch apart.

Bake for about 15-18 mins. Remove from oven and keep cookies on baking sheet for 5 mins, they will still be incredibly soft. Cool completely on a cooling rack until cool and that you can pick them up.

One thing left to do - Eat up!!!

Every month add one new spice or marinade to your pantry, and use it at least once a week during that month, buy looking for recipes on-line. This will allow you to not only learn about new spices and flavour combinations but make you much more comfortable with creating your own and experimenting with your dishes.

Don't buy prepackaged. Be your own butcher! Buy larger pieces of meat for cheaper and prepare them at home. This will allow you to incorporate more expensive pieces of meat on a weekly budget, experiment with more recipes and save you lots of money!
