FALL OF THE BONE HONEY-BALSAMIC RIBS......Nough Said....

What you'll need: (4 servings)

  • 4-5 pounds Baby-Back Pork ribs (about 4 racks of ribs)

  • 3 tbsp of Olive oil

  • 1/4 cup of Balsamic vinegar + 4 tbsp on the side

  • 2 cups of regular Ketchup

  • 1/4 cup Red Wine Vinegar

  • 2 tbsp Worcestershire sauce

  • 1 1/2 cup Brown sugar

  • 1/2 cup White sugar

  • 3 cloves of crushed Garlic

  • 3 tbsp of Honey

  • Salt & Pepper to taste

  • 2 Jelly-roll pans

  • Parchment paper

  • Aluminum paper

What you'll do:

Ribs-

Salt and pepper the pork rib racks evenly (remove the membrane if you'd like)

Preheat oven to 275 degrees.

On a jelly roll pan, line the bottom with parchment paper. Using about 4 large sheets of aluminum foil, line the bottom of the jelly roll pan with one sheet vertically shiny-side down, now two sheets horizontally, over-lapping a bit, and place the rib racks side by side in the jelly roll pan, meaty side-up. Drizzle some olive oil and 1 tbsp of balsamic vinegar over each rib rack. Then place another sheet over the ribs. Tightly fold the edges of the aluminum foil to create a sort of foil package. - You can't really do this wrong! :) Just make sure the ribs are sealed in.

If your oven has a steam feature, I strongly suggest using it here, your ribs will be extra "fall off the bone"! KitchenAid seriously has nailed this feature with their newer ovens, I use it for so many recipes!

Place ribs in oven - they will be ready to slow-cook for the next 3 1/2 - 4 hours! However, we will still be checking in on them every hour, to sauce them up with Balsamic BBQ sauce!

And now the sauce....

Honey Balsamic BBQ Sauce -

In a stock pot or dutch oven, cook, on medium heat, the garlic and olive oil.

When the garlic is about to brown, add the ketchup, and cook another 3 minutes.

Add the balsamic vinegar, red wine vinegar and Worcestershire sauce, cook 3 minutes.

Add the sugars, and cook another 5 mins, and reduce heat.

Add the honey, and salt & pepper to taste.

Cook the sauce for about 30-35 minutes,  mixing the sauce every 10 mins or so. It will be ready when the sauce glazes your mixing spoon.

Once it is done... we'll it should be time to sauce the ribs!

Back to the Ribs -

They should have cooked for just about their first hour.

Remove the ribs from the oven, and slowly open up the foil package, BE CAREFUL! The steam may be hot to the touch, -  brush a generous amount of BBQ sauce over the ribs.

Close up the foil package, and place the ribs back into the oven.

Cook for another hour, repeat....

At the 3rd hour, remove ribs from oven, remove top of the aluminum package, BE CAREFUL ONCE AGAIN, brush some more BBQ sauce, don't re-cover with the aluminum foil, and higher the oven temperature to 350 degrees. Cook the ribs for about 30 mins.

Once the BBQ sauce has thicken  you can either finish your ribs off on the BBQ or simply broil them at 500 degrees for about 5 mins, to really caramelize the balsamic vinegar in the sauce. - You can definitely add more sauce too!! :)

Everyone will be happily licking their fingers at the end of this meal!

Enjoy!!

**** Use the Honey Balsamic BBQ sauce on chicken or as a glaze when BBQing vegetables on the grill!

COOKING TIPS

#1

When a recipe asks for celery, add fennel instead. You'll be pleasantly surprised by the elevation of flavour.

#2

Every month add one new spice or marinade to your pantry, and use it at least once a week during that month, buy looking for recipes on-line. This will allow you to not only learn about new spices and flavour combinations but make you much more comfortable with creating your own and experimenting with your dishes.

#3

Don't buy prepackaged. Be your own butcher! Buy larger pieces of meat for cheaper and prepare them at home. This will allow you to incorporate more expensive pieces of meat on a weekly budget, experiment with more recipes and save you lots of money!
