Bruschetta Cherry Tomato FlatBread

Want pizza but don't have the time to make pizza?.....Flat bread is the perfect alternative! With some juicy cherry tomatoes and the perfect spices....I suggest you make two!

What you'll need:

  • 1 1/2  cups of Flour

  • 1 Tsp of Salt

  • 1/3 cup warm water

  • 5 Tbsp of Olive Oil

  • 1 cup slice Cherry Tomatoes

  • 1/8 cup chopped Red Onion

  • 1 tsp of Basil

  • 1 tsp of Parsley

  • 1/2 Tsp of Thyme

  • 1 Tbsp of Rosemary

  • 1/2 Tbsp of Balsamic Vinegar

  • 1 tsp of Red Wine Vinegar

  • Salt and Pepper to taste for the tomatoes


as much of your favorite Parmesano!

What you'll do:

Preheat oven to 375 degrees,

First you'll make the dough for the flatbread.

Combine the flour, salt, warm water and 2 tbsp of olive oil in a stand mixer with a dough hook. **If you don't have a stand mixer, simply use a flat surface and you'll knead together the ingredients.

Once the dough is formed, roll out using a rolling pin, flour each side and set aside on a baking sheet lined with parchment paper,

Making the delicious bruschetta topping,

In a bowl, combine the Cherry Tomatoes, 3 Tbsp of Olive oil, Red Onion, Basil, Parsley, Thyme, Rosemary, Balsamic Vinegar and Red Wine Vinegar, Salt and Pepper. 

Once combined, drizzle everything on top on your flat bread dough.

Bake for 20-25 mins, or until golden brown.

Once the flatbread is ready, remove from oven, drizzle with Parmesano shavings and let stand for 5mins.

Then serve it up!! Enjoy!
