Creamy Avocado Strawberry Salad With Toasted Almonds

Summer = Salads and rosé !

I take seasonal fruits, toasted nuts and make dozens of different salads. YOU CANT GO WRONG! It really is an easy and perfect combination!

I will guarantee that you'll be making this salad more than once this summer....

What you'll need:

1/2 cup of sliced Strawberries

1/2 cup of thickly sliced Cucumbers

1 very ripped Avocado, crushed

1-2 heads of Boston Salad (this recipe is for 4 so depends the size of your Boston salad)

1 1/2 Tbsp of Rice Wine Vinegar

2 Tbsp of Balsamic Vinegar

3 Tbsp of Avocado oil (you can also use Canola)

1 Tbsp of White Wine Vinegar

1/4 cup of sliced toasted Almonds

Salt & Pepper to taste

What you'll do:

In a small bowl, make the vinaigrette by mixing the vinegars and oil - set aside.

In a large bowl, mix the avocado, strawberries, cucumbers and almonds. Once everything is mixed, add the Boston salad, and drizzle the vinaigrette, give it one final mixing.

That's it! - Serve with spicy food and a glass of rosé, and your set!

Don't buy prepackaged. Be your own butcher! Buy larger pieces of meat for cheaper and prepare them at home. This will allow you to incorporate more expensive pieces of meat on a weekly budget, experiment with more recipes and save you lots of money!
