Nutella Mascarpone Cream Zeppole

This is as traditional Italian as it gets. Zeppole is that dessert that is usually savoured during and around the Easter season, to celebrate San Guiseppe - Saint Joseph’s Day (Italy’s father’s day).
However.... I think they could be savoured all year long too!
Zeppole is either baked or fried, sometimes they look like doughnuts and stuffed with cream, and other times they look like little puffed balls dusted with icing sugar. Whichever way, they are always delicious.
This is an easy way you can make them at home by baking them, and an easy 2 mins cream!
What you’ll need:
Zeppole:
1/4 cup of butter
1 tsp of sugar
1/2 cup of water
1/2 cup of flour
2 eggs
Cream:
1 cup of mascarpone
1/2 cup of icing sugar
2 tbsp of whipping cream 35%
1 tsp of Nutella
Other
4-6 tsp of Nutella
4 tbsp of icing sugar
Pastry bag
Silicone mat
What you’ll do:
Preheat oven to 400 degrees.
Making the Zeppole dough.
On your stove top on medium heat, in a sauce pan, combine the butter, sugar, and water. - bring to a boil, and remove from heat. Add the flour immediately, and mix well.
Place on heat for 1 min to help mix the batter a bit more, remove from heat.
Add one egg at a time, and mix well between each egg. The batter will be slightly thick but shiny.
Place mixture in a pastry bag with the top of your choice, wait 2 mins.
Line a baking sheet with a silicone mat. You can use parchement paper, but you’ll have to make sure they don’t over cook.
With your pastry bag, make doughnut shapes, make them at least an inch high, and 3-4 inches in diameter.
Bake them for 25-30 mins, until they have puffed up and are light golden brown.
Once they are cooked and puffed up, rest them on a cooling rack.
Make the cream!
Im a stand mixer, mix all the ingridinents until fluffy.
Once your Zeppole are completely cool, slice them in half, right to left. Fill with a generous amount of mascarpone cream, and add another small dolop of Nutella in the middle.
Sprinkle with icing sugar! Enjoy!
