Mini Eggs Doughnuts and Rice Crispies

Mini Eggs are so so delicious... you can easily finish a bag all to yourself.. and anybody else’s!

I think mini Eggs should be a baking staple!

Here are two fun and easy desserts that any child or grownup will love!

Chocolate cake mini eggs doughnuts

What you’ll need:

  • 1 cup of flour


  • 1/2 cup of cocoa

  • 2 eggs

  • 1/2 cup melted semi sweet chocolate

  • 1/2 cup white sugar

  • 1/4 cup brown sugar

  • 1 tsp baking powder

  • 1 tsp of salt

  • 1/2 cup of milk

  • 1/2 cup of canola oil

  • 1/2 + 1/3 cup crushed mini eggs

  • Doughnut cake mold ( 2 x 6 ) : makes 12 doughnuts


What you’ll do:


Preheat oven at 350 degrees.

In a bowl, mix the flour, cocoa powder, baking powder, and salt.

In a stand mixer, mix the sugars and eggs. Add the milk and oil, mix well.

Add slowly the flour mixture to the wet mixture, untill combined well.

Add 1/4 cup of melted chocolate. Add 1/2 cup crushed mini eggs.

Add batter to the doughnut mold.

Bake for 15-20 mins untill cooked through.

Cool doughnuts on a cooling rack. Drizzle with remaining melted chocolate and drizzle with remaining mini eggs.

*** if you need to melt the chocolate I would suggest melting it using a double broiler technique, but you can melt it in a microwave too. If your chocolate is too thick, add a tsp of Shortening, mix really well, it will allow it to be fluide.

Mini egg rice crispies


What you’ll need:


  • 8 cups of original Rice Crispy cereal

  • 1/4 cup of butter

  • 1 pkg of multi coloured mini marshmallows (400g)

  • 1 cup of crushed mini eggs

  • 1/2 cup melted semi sweet chocolate

  • A baking pan, Pyrex plate, anything you will use to mold and cool your rice crispy treats.


What you’ll do:


On your stove top, on low-medium heat, with a saucepan, melt the butter.

When the butter is melted, add the marshmallow and mix untill everything is melted, remove from heat. You’ll have to work fast now!

Immediately add the rice crispy cereal. And mix quickly, add the mini eggs, mix, and place into your mold, make sure to press down.

Drizzle the melted chocolate and some more crushed mini eggs.

Cool for 15 mins.

Every month add one new spice or marinade to your pantry, and use it at least once a week during that month, buy looking for recipes on-line. This will allow you to not only learn about new spices and flavour combinations but make you much more comfortable with creating your own and experimenting with your dishes.

Don't buy prepackaged. Be your own butcher! Buy larger pieces of meat for cheaper and prepare them at home. This will allow you to incorporate more expensive pieces of meat on a weekly budget, experiment with more recipes and save you lots of money!
