Italian lemon twist cookies with Limoncello glaze ~ Tarrallucci

I love a good cookie that is perfect for coffee dipping! These are it! The cookie is soft almost cake with just a hint of lemon and the glaze is sugary with a yummy dose of lemon! 

With the perfect latte... this cookie.... it’s a perfect start to your day! ... or anytime in between ~

What you’ll need:

Cookie:

  • 3 eggs

  • 3 cups of flour

  • 4 tsp of baking powder

  • 1 tsp vanilla

  • 1/2 cup of white sugar

  • 1/2 cup of canola oil

  • 1 tsp of lemon oil

  • 1/2 tsp salt

  • Zest of 1 medium lemon

  • 1/2 lemon juiced (about a 1/4 cup)

Glaze: 

  • 1 1/2 icing sugar

  • 2 tbsp of lemon juice

  • 4-5 tbsp of limoncello

  • 1/2 lemon zested

What you’ll do:

Preheat oven to 350 degrees. 

In a bowl, combine the flour, salt and baking powder, set aside. 

In a stand mixer (or a bowl), mix the sugar and eggs untill combined. Add the vanilla, oil, lemon juice, lemon oil, and lemon zest. 

Slowly add the flour mixture to the wet mixture.

The batter will be thick to the touch, take a spoonful, and on a flat surface roll the batter into long rolls of dough. Once you have your desired length, simply twist the rolls of dough to make twists. 

Place on a cookie sheet lined with parchment paper. 

Bake your cookies for 15-17 mins until they are just about browned. Cool them on a cooling rack. 

Make the glaze! 

Im a small bowl combine all ingredients and mix well.  

Only when the cookies are completely room temperature, simply brush a layer of glaze on each cookie, and then repeat another time. We want to double glaze them. 

Wait 5-10 mins until the glaze hardens, and Enjoy!!

Don't buy prepackaged. Be your own butcher! Buy larger pieces of meat for cheaper and prepare them at home. This will allow you to incorporate more expensive pieces of meat on a weekly budget, experiment with more recipes and save you lots of money!
