Grilled Mediterranean Fish Tacos

How about some summer inspiration, even if it may still be quite chilly outside! My husband loves Fish, Shrimp, Chicken.... pretty much any TACO and especially when it’s a little more Mexican-Fusion!
These tacos are a little tangy and a little vinegary with a Mediterranean flair. Paired with purple corn tortialls and a lemony white rhum drink, you are pretty set to start the weekend off.... or feel like your In weekend mode during the week :)
What you’ll need: (serves 8-10 small tacos)
2 filets of white fish (I used Basa)
4 tsp of paprika
1 cup of fresh baby spinach
1/4 cups of halved cherry tomatoes
1/2 cup of arugula salad
2 tbsp of olive oil
1 tbsp of balsamic vinegar
1/2 cup of chopped fresh cilantro
1/4 cup of thinly sliced red onion
1/4 cup of red wine vinegar
1 tsp of white sugar
8-10 corn tortillas
Salt and pepper to taste
1/2 cup vegetable or canola oil
Sauce
1/2 cup of 14% sour cream
Juice from 1/2 lime
2 tbsp of Tzatziki
1 tsp of olive oil
Salt and pepper to taste
What you’ll do:
In a small bowl, combine the red onion slices, red vine vinegar and the sugar, mix and set aside.
Season your fish, on each side sprinkle 1 tsp of paprika and salt & pepper to taste, set aside.
Prepare your sauce, in a bowl combine all ingredients, mix, and set aside in the fridge.
Prepare your salad, in a bowl combine the arugula, cilantro and cherry tomatoes, mix. Then add the olive oil and balsamic vinegar, salt & pepper to taste, mix and set aside.
Fry your spinach, in a shallow skillet, heat your canola/vegetable oil, once it is hot, add the spinach, quickly fry until crispy and remove to set on a paper towel, set aside.
Prepare your grill pan or BBQ (you can also use a skillet). Drizzle the bottom of your pan with some oil and grill each side of the fish, set aside for 5 minutes, and chop thé fish in large pieces.
Now take your tortillas and grill them also, just before they get crunchy, set aside.
Now it’s time to assemble the TACOS!!
Take a grilled tortilla and add a generous amount of sauce in the middle. Add some pieces of fish directly on the sauce. On one side add the fried spinach and on the other the salad.
Sprinkle some lemon juice or extra lime juice & ENJOY with a Lemon drink!!
*** TIP: want more bite? You can add some crumbled feta and spicy bans peppers!!

1/4 cup white Rhum
1 can of San Pellegrino Lemon
2 basil leaves
