Ricotta Blueberry Dark Chocolate Waffles with layers of Ricotta Cream

Breakfast weekends are so special! You get to wake up when you’re ready, take your time to enjoy your coffee and get to make special breakfast dishes! Waffles are by far my husband’s favorite, so I’ve come up with a few fun waffle twists.

The most important factor to a good waffle is they must must be fluffy! Here is an extra fluffy waffle with ricotta, fresh blueberries and some dark chocolate chips, & ricotta cream.

What you’ll need:

Waffle

  • 2 cups of flour


  • 2 tbsp of baking powder

  • 3/4 cups of white sugar

  • 2 egg yolks

  • 3 egg whites

  • 4 tbsp of vegetable oil

  • 2 cups of milk

  • 2 tsp of vanilla

  • 1/2 cup of fresh blueberries

  • 1 tbsp of white sugar

  • 1/2 cup of dark chocolate chips

  • 4 tbsp of ricotta

  • Pinch of salt

  • Favorite Canadian Maple syrup 

Ricotta cream

  • 1/4 cup of ricotta

  • 3 tbsp of white sugar

  • 1 tsp of vanilla

  • 1/2 tsp of 35% whipping cream

What you’ll do: (Makes 6 large waffles)


Making the waffle mixture -

Mix in a bowl the flour, baking powder and salt, set aside

In another bowl mix the egg yolks, sugar and vanilla. Once mixed, add the milk, oil and ricotta. 

Start adding the flour mixture slowly to the wet mixture, untill all lumps disappear.

Mix the egg whites untill fluffy and bright white. Fold them into the waffle mixture, dont over mix.

In a small bowl or a ziplock, mix the blueberries and 1 tbsp of sugar, untill fully coated, set aside.

Heat your waffle maker and add the mixture about half way. Add some sugared blueberries and some dark chocolate chips. 

The mixture will grow rapidly so dont over fill. Cook waffles depending on waffle maker instructions.

While the waffles cook, make the ricotta cream.

Combine and whisk the ricotta, vanilla, sugar and whipping cream, set aside.

When the waffles have been all cooked, cream each layer of your waffles.

Finish it off with extra fresh blueberries and a nice amount of your favorite Canadian maple syrup!

Every month add one new spice or marinade to your pantry, and use it at least once a week during that month, buy looking for recipes on-line. This will allow you to not only learn about new spices and flavour combinations but make you much more comfortable with creating your own and experimenting with your dishes.

Don't buy prepackaged. Be your own butcher! Buy larger pieces of meat for cheaper and prepare them at home. This will allow you to incorporate more expensive pieces of meat on a weekly budget, experiment with more recipes and save you lots of money!
