Fluffy Lemon Madeleines dipped in Dark chocolate ganache and crumbled pistachios

One of my favourite dessert ingredients is LEMONS! Its sweet, tangy, and has a beautiful colour. I just love lemon madeleines because the lemon flavour is able to be the start of the dessert without it being over powering. And the Madeleine is the perfect little treat because its a cake & cookie combines into one - pure perfection!

What you'll need:

- 3/4 cup of flour

- 1/2 tbsp of baking powder

- 2 whole large eggs

- 1/2 cup of sugar

- 1 medium lemon zested

- 2 tbsp of fresh lemon juice

- 1/2 cup of melted cool butter

- 1/2 tsp of vanilla

- 2 madeleine molds (or you'll use one twice)

What you'll do:

Preheat oven to 400 degrees.

In a bowl mix the flour and baking powder, set aside.

In a stand mixer, mix the eggs, sugar, lemon zest, lemon juice, butter and vanilla. Once all the ingredients are mixed, fold in the flour mixture. Let stand for 20 mins.

In 2 madeleine mold, insert lemon mixture 1/2-3/4 of the way. Make sure the bottom of the mold is covered.

Bake for 8-9mins, until the edges have slightly browned but the cake is still soft. Let stand on a wire rack for 3 mins, and then remove madeleines from mold, and let stand for another 10 mins.

Simple Dipping Chocolate Ganche

What you'll need:

  • 4 ounces of dark chocolate

  • 2 tbsp of whipping cream

  • pinch of salt

What you'll do:

In a double broiler, heat the whipping cream just slightly, add the chocolate, and fold until melted. Dip cooled madeleines in chocolate, top with crushed pistachios (salted, roasted, or natural - all depending your taste)

Every month add one new spice or marinade to your pantry, and use it at least once a week during that month, buy looking for recipes on-line. This will allow you to not only learn about new spices and flavour combinations but make you much more comfortable with creating your own and experimenting with your dishes.

Don't buy prepackaged. Be your own butcher! Buy larger pieces of meat for cheaper and prepare them at home. This will allow you to incorporate more expensive pieces of meat on a weekly budget, experiment with more recipes and save you lots of money!
