Zucchini Noodle Balsamic-Soy-Glazed Stir Fry - "My Italian Stir Fry"

A little Carbed-out after the weekend? Best remedy - Zucchini noodles. They are one of the best alternatives to pasta and this dish can be made in under 30 mins. Perfect for an on-the-go Tuesday.

How to make zucchini noodles? You'll need a little kitchen gadget for this - a spiralizer. You'll be able to make a ton of different dishes and use it for more than just zucchinis, so, in my opinion, completely worth purchasing one. Here is the one I use from OXO , but any that you like at your desired price range will do just fine.

Zucchini Noodle Balsamic-Soy-Glaze Stir Fry ( makes 2 large plates or serving for 4)

What you'll need:

For stir-fry:

- 2 garlic cloves, crushed

- 1/2 pound of Italian sausage (you can get spicy for a little more heat)

- 1/2 cup red onion, chopped

- 1/2 cup bell peppers, cubed

- 1/2 cup of cherry tomatoes, halved

- 1/2 cup of carrots, chopped

- 1/3 cup of enoki mushrooms

- 4 baby bok choy, sliced

- 1/2 cup of snap peas, whole or halved

- 1 1/2 bean sprouts

- 3-4 cups spiraled zucchinis

- 2 tbsp of vegetable oil

- 1 tsp of sugar

For sauce:

- 6 tbsp of balsamic vinegar

- 4 tbsp of soy sauce

- 1 tbsp of rice wine vinegar

- 1/2 tbsp of sesame oil

-1/2 tbsp of toasted sesame seeds

Make the stir-fry sauce. In a bowl, mix 3 tbsp of balsamic vinegar and all other ingredients, reserve on the side.

In a wok or deep skillet, heat, on medium, some vegetable oil and crushed garlic. When the garlic is about to brown, add the sausage and red onion. When the sausage is nearly cooked through, add the bell peppers, cherry tomatoes, carrots and enoki mushrooms - Fry until vegetables sweat through and cherry tomatoes have cooked down. Add, bok choy, snap peas, and bean sprouts. Give it a good mix and add the stir-fry sauce. Cook until vegetables are softened, but snap peas and carrots still have a crunch to it. Add spiraled zucchinis - mix zucchinis 4-5 times and they will be ready to eat. ** Zucchinis should still have a slight crunch to them.

Plate your stir-fry while leaving reserved sauce in the wok. Turn the heat to high, add your 3 remaining tbsp of balsamic vinegar and sugar. When it crystallizes, drizzle on zucchini stir-fry and some more toasted sesame seeds if you'd like.

Have fun with this dish, replace Italian sausage with chicken breast. Have some vegetables in your fridge and you don't know what to do with them, add them in this stir-fry! Tuesday meals are meant to be easy, useful and fast!

Don't buy prepackaged. Be your own butcher! Buy larger pieces of meat for cheaper and prepare them at home. This will allow you to incorporate more expensive pieces of meat on a weekly budget, experiment with more recipes and save you lots of money!
