Fresh Tomato Basil Sauce

So many people ask me how I make my tomato sauce. I always say keeping it simple and using fresh ingredients is key. With just 4 ingredients and a little salt & sugar you end up with something pretty magical and the perfect way to end the weekend. O and its soooooo easy to make.

Here we go!

- What you'll need:

  • 2-3 fresh Roma tomatoes per person, cut into 8s

  • Handful of fresh basil leaves

  • 1 cloves of garlic per 3 tomatoes

  • 1 tbsp of extra virgin olive oil per 3 tomatoes

  • 2 tsp of salt {or more to taste}

  • 2 tsp of sugar

In a deep dutch oven, cook through the olive oil and garlic at about medium heat. Once the garlic is just about to brown, add the cut tomatoes, stir tomatoes every 10 mins. Let the tomatoes cook down until they are tender to the touch - about 30-50 mins. With a hand blender, blend the tomatoes directly in the dutch oven. Once the tomatoes are blended add the salt, sugar and basil, and turn down the heat slightly. Cook down for another hour {cook longer if you need to, ovens are different, so treat them differently} stirring occasionally every 15 mins or so. Once its to your liking, your ready to add it to your favorite pasta!

As easy as that you've got yourself some fresh, healthy, tasty tomato sauce. Although super yummy on pasta, this sauce can be used in a ton of different recipes that call for a tomato sauce base.

** Christina's tip! Freeze your sauce - you have some tomatoes that are starting to brown or starting to be less fresh, make this tomato sauce. Cool it and add it to a freezer safe plastic ziplock. You can freeze that sauce for a good month. You'll save those tomatoes, save your money and you'll be glad you did so, when you are savoring that tomato sauce and your favorite pasta a couple weeks later - with a good glass of wine, you'll feel like you are in Tuscany!

When a recipe asks for celery, add fennel instead. You'll be pleasantly surprised by the elevation of flavour.

Every month add one new spice or marinade to your pantry, and use it at least once a week during that month, buy looking for recipes on-line. This will allow you to not only learn about new spices and flavour combinations but make you much more comfortable with creating your own and experimenting with your dishes.

Don't buy prepackaged. Be your own butcher! Buy larger pieces of meat for cheaper and prepare them at home. This will allow you to incorporate more expensive pieces of meat on a weekly budget, experiment with more recipes and save you lots of money!
